Region: IGP Pays d’Oc
Grapes: 100% Sauvignon Blanc
Vineyard: South of Carcassonne. Individual parcels of Sauvignon are cultivated in a strict environmentally manner, with minimal use of chemical sprays and complete vineyard tracebility. The soils are primarly clay-limestone with some rocky, gravelly examples.
Vinification: Grapes pass directly into the press. Temperature controlled fermentation followed by chilled settling to naturally clarify the wine.
Tasting notes: Pronounced citrus fruit nose. On the palate, a powerful expression of lemon and lime fruit, with richness and a long mineral finish.
Food pairing: An ideal companion for shellfish, lobster or crab. Equally at home as an aperitif or with food, the Amélie Sauvignon works well with all types of fish, salads or Oriental and Asian cuisine. Serve chilled between 8 and 10°C.
