Region: IGP Pays d’Oc

Grapes: 100% Merlot

Vineyard: South of Carcassonne. Environmentally friendly viticulture creating a natural biodiversity using the natural cycles and rhytms of the vine. The soils are primarly clay-limestone with some rocky, gravelly examples.

Vinification: Temperature controlled fermentation in a tank for eight days. A gentle extraction technique allows to ontain a well balanced phenolic and tannic structure.

Tasting notes: Bright, deep, red wine with purple highlights and aromas of ripe red and black fruits.

Food pairing: The elegant tannic structure allied tot he long finish are the perfect match for red meats, ducks and spicy chicken dishes. Serve at a temperature around 14 °C
