Grapes: 100% Chardonnay
Vineyard: South of Carcassonne. Individual parcels of Chardonnay are cultivated in a strict environmentally manner, with minimal use of chemical sprays and complete vineyard tracebility. The soils are primarly clay-limestone with some rocky, gravelly examples.
Vinification: Grapes pass directly into the press. Temperature controlled fermentation followed by chilled settling to naturally clarify the wine.
Tasting notes: Bright golden appearance with a floral nose. On the palate the wines show flavors of grapefruit and pineapple.
Food pairing: A delicate, well-balanced wine that can be served as an aperitif or with food. Amélie Chardonnay works particulary well with all type of fish. Serve chilled between 10 and 12°C.
